"Jesus Christ is the same yesterday and today and forever" (Hebrews 13:8). "...the word of our God stands forever" (Isaiah 40:8). The fact that God is defined as immutable means that the Father, the Son, the Holy Spirit, and the Word never have changed and never will change.
The concept of a growing or developing God is not found in Scripture. However, have you ever pondered the thought of how our unchanging God uses "change" in the lives of His people. "In a fallen world such as this the very ability to change is a golden treasure, a gift from God of such fabulous worth as to call for constant thanksgiving." (A.W. Tozer) Through the power of His redemption we, as believers, go from "death" to "life", from "slaves" to "free", taking off the "old" and putting on the "new". "When God infuses eternal life into the spirit of a man, the man becomes a member of a new and higher order of being." Praise God for the gift of change!
Although God has allowed me to change, grow, and continue to grow, I am thankful that He is immutable. A.W. Tozer writes this, "What peace it brings to the Christian's heart to realize that our Heavenly Father never differs from Himself. In coming to Him at any time we need not wonder whether we shall find Him in a receptive mood. He is always receptive to misery and need, as well as to love and faith. He does not keep office hours nor set aside periods when He will see no one. Neither does He change His mind about anything. Today, this moment, he feels toward His creatures, toward babies, toward the sick, the fallen, the sinful, exactly as He did when He sent His only-begotten Son into the world to die for mankind."
Praise you, Lord, for being immutable.

Num.23:19 says that "God is not a man that He should lie..." and as you pointed out, what comfort and assurance we have that we can come to The Lord of All, any time, any place, and have complete confidence that He is the always loving... always the same...

I, like you, am thankful that "our unchanging God uses change in the lives of His people"...and as you pointed out the change that I am most thankful for is the change from death to life...in my own life as well as in the lives of those that I love. And, I am thankful that by His grace, He is changing my understanding of who He is. The more He opens my eyes and allows me to see Him, the deeper my love for Him grows.
